Oregano lamb with charred spring onions and a fresh watermelon salad
Oregano lamb with charred spring onions and a fresh watermelon salad

This is a delicious summer dish that can be enjoyed warm or cold. The olive oil, lemon, garlic and oregano keep the lamb juicy and flavoursome, the charred spring onions are soft and sweet while the watermelon is crisp and refreshing. If you do decide to eat this dish cold, slice the lamb thin and give the avocado an extra squeeze of lemon to stop it from oxidising.
