Eggplant, also known as an aubergine and brinja, is botanically a fruit that is pear shaped and measures around 20cms in length. The skin is an attractive, glossy, deep purple colour revealing a firm, white seeded flesh.


Culinary Uses

Eggplants may be sliced and fried, baked, boiled, steamed or grilled. Eggplant is very good when stuffed with meat, sautéed in olive oil, baked or scalloped and topped with cheese, creamed mushrooms, sour cream or a rich tomoto sauce. Eggplant is often served as a salad, a side or made into a dip. 


Selecting the best produce

Fresh eggplants should have a fresh stalk, firm skin and feel heavy in weight for their size.  An eggplant’s skin should be a uniform, rich purple colour which is free from any scars or cuts.  Eggplant which shows signs of being wilted, shriveled or soft will usually be quite bitter and of poor flavor. Decay will initially appear as dark brown spots, present on the surface of the skin, with eggplants quickly deteriorating in quality thereafter. 


Storing

7-10 degrees celcius at 90-98% relative humidity.


Harvesting & Packaging

Eggplant is harvested when it reaches a certain size and has developed its smooth skin with its characteristic deep purple colourings. As an eggplants fruit stems are hard and woody, fruit is carefully cut with secateurs, taking care not to damage or bruise the skin.

Nutrition

Eggplant is a natural weight loss wonder due to its high fibre and water content, yet low calorie count. In addition eggplant is an excellent source of antioxidants and has some manganese and vitamin B.

DIETARY FIBRE

Fibre contains no calories, and is a necessary element of a healthy diet in sustaining normal blood sugar levels and in promoting a healthy digestive system. Dietary fibre reduces the transit time of food in your gut, improves gut microflora and assists in lowering blood fats.

ANTIOXIDANTS

Eggplants are rich in important phytonutrients and Phenolic Compounds which act as antioxidants. These are some of the most potent free radical scavengers helping to protect against cancer and bad cholesterol whilst boosting your bodies own immune systems. In addition, another powerful antioxidant found in eggplant is nasunin. Nasunin protects the lipids in brain cell membranes supporting healthy brain function. Nasunin also acts as an iron chelator and helps to regulate healthy iron levels. By chelating iron we can lessen free radical formation and cellular damage which can lead to cancer and rheumatoid arthritis.

MANGANESE AND VITAMIN B1 (THIAMIN)

Trace minerals found in eggplant are essential for energy production and in assisting our bodies antioxidant defences. Magnesium assists in your bodies overall well being by maintaining normal muscle and nerve function, is supportive of a healthy immune system and maintains bone strength. Magnesium also assists in regulating blood sugar levels and in maintaining normal blood pressure levels.
